Whole Grain Oatmeal Raisin Cookies
Because the raisins in this recipe are soaked before they are incorporated into the dough, they stay soft and moist. This recipe is a family favorite! Begin by grinding your grainfresh in your Nutrimill or Golden Grain Grinder.
Simmer about 15 min. over medium heat:
1 Cup raisins
1 Cup water
Allow raisins to cool slightly. Set aside.
Combine in Bosch Universal Plus Mixing Bowl equipped with Cookie Paddles:
3/4 C. Butter
1 1/2 C. sugar
2 eggs
1 tsp. vanilla
Mix in.
Approx. 2 1/2 - 3 C. Whole Wheat Flour (Freshly ground is best!)
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. cloves
2 C. rolled oats (I use rolled 6-grain)
Raisins with water (from above)
Drop by rounded teaspoons onto ungreased cookie sheets about 2″ apart. Bake at 400 degrees about 8-10 minutes until lightly browned. These are delicious when you add nuts or chocolate chips. Approximately 6 dozen cookies.
