Alaskan Oatmeal Bread

Try this wonderful recipe in your new Bosch Universal Plus mixer, or in your older, well-loved Bosch Universal mixer. You’re in for a treat! This flavorful bread has a chewy crust and is perfect for sandwiches or toast. We love it! Hope you do, too! This was shared by one of our dear customers. This recipe makes two loaves.

Combine in Bosch mixing bowl and let set about 5 min.

2 1/4 C. warm water

2 Tbsp. SAF yeast

1/2 C. honey

ADD and mix in:

2 C. whole wheat flour (freshly ground in your Nutrimill or Golden Grain Grinder is best!)

1 C. white bread flour (not all-purpose)

1 C. rolled oats (I use rolled 6-grain)

1 Tbsp. salt

4 tsp. butter

1 egg

Knead about 2 min. in your Bosch mixer on speed 1 or 2 and then add:

1 C. white bread flour

1-2 C. whole wheat flour (enough to clean the Bosch Bowl and make a soft dough)

Knead for about 8 min. Dough should be elastic when lightly pulled.

You may transfer this dough to a greased bowl and cover to let rise. I leave mine in my Bosch mixing bowl and put the cover on loosely. Let rise until double, about 40 min. or so.

Punch down dough (I “jog” my dough hook once by turning the speed control on my Bosch Mixer to the left and holding it for just a moment). Remove dough onto lightly oiled surface. Divide dough into halves, cover and let rise about five min. Form into two balls of dough and place on greased cookie sheet. Cover and let rise until double. Cut three slashes with a sharp knife into the tops of each loaf. Bake at 350 degrees until done, about 35-40 min. This dough may also be formed into loaves and baked in bread pans about the same amount of time. Remove from baking pans and let cool thoroughly before packaging for storage. ENJOY! The loaves can be frozen once they have thoroughly cooled.

These loaves look professional. I take mine with a jar of jam or jelly as a gift for my friends.
