9-Grain Whole Wheat Bread
This recipe adds delicious 9-Grain cracked cereal to other wholesome ingredients for another delicious bread recipe. You may substitute 7-grain cracked cereal or other combinations of grains.
Mill your fresh ground whole wheat flour in your Nutrimill or Golden Grain Grinder. You will need approximately 9 1/2 Cups of flour. Then, in your Bosch Universal Mixer, start adding the following ingredients:
5 1/2 Cups warm water
2 Tbsp. sea salt or table salt
1/2 Cup Oil (I use extra virgin olive oil
3/4 C. honey
3 Tablespoons dough enhancer (or lemon juice or vinegar)
3 Tablespoons vital wheat gluten
2 Cups 9-grain cracked cereal (or other cereal grain combination)
6 Cups whole wheat flour
2 Tablespoons SAF yeast
Mix all of these ingredients on speed one or two with the dough hook. After they are mixed, start adding an additional 3-4 cups of whole wheat flour, one cup at a time just until the dough starts to wipe the sides of the Bosch Universal mixing bowl clean. At that point, let the dough mix for approximately 8 minutes to develop the gluten. This should be a soft dough (like it feels when you pinch your cheek), but should not be sticky. Be sure and keep the dough covered while it rises. If you are using the lids that fit your Bosch Bowl during rising, turn them so that they are NOT locked into place. That way the dough can gently lift the lids, if necessary. Let rise until about double, approximately 20-25 minutes.
Spray bread pans with non-stick spray or use butter or shortening to prevent sticking. Form loaves on lightly oiled counter surface and place in bread pans. Do not fill pans more than about 2/3 full of dough. Let rise until about double and bake in 350 degree oven about 35 minutes until done. This recipe makes 4 medium sized loaves. Remove from pans to cool. Wire racks or clean towels work nicely.
After the loaves are thoroughly cooled, they may be frozen.
