PURCHASE QUALITY GRAIN:
1 - Purchase grain through a reputable dealer or grower. Make sure the grain has been thoroughly cleaned. We recommend triple cleaned grains. The Nutrimill warranty does not cover damage caused by rocks, etc.
2 - The quality of your grain will affect the quality of your bread. The bran (outer coating of kernel) and wheat germ (the embryo of the kernel that would develop into a new plant) contained in wheat have a tendency to make bread heavy and unresponsive to yeast. A high protein wheat (14+ percent) or added vital wheat gluten will counteract this so bread rises properly. Ask your dealer or grower what the protein percentage is in the wheat you buy.
3 - Ask your dealer or grower about the moisture content of your grain. Make sure your grains are dry (10% moisture or less). DAMP or OILY grains may cause your mill to plug up. For example, flax seeds are oily, and oats can have high moisture.
4 - Rotate grain as you would other perishable food items even though, when properly stored, wheat can last 20 years.
The Nutrimill makes flour from Wheat, Buckwheat, Split Peas, Popcorn, Sorghum (milo), Triticale, Rye, Rice, and Millet. AVOID high oil or moisture content grains, beans, and seeds.
