Set it coarse for cornbread (large knob rotated to maximum clockwise), or fine for bread flour (knob pointing straight up and down). You can carry-on a conversation while you make flour because it's 50% quieter -- much quieter than old designs. Its new, variable high-speed motor runs cooler for longer milling life. The bowl/drawer easily slips into place to catch your fresh flour.
